20 Slow-Carb Meal Ideas (Photos)

One of the most difficult challenges folks seem to run into while working out their slow-carb diet is coming up with things to eat. It seems that the things people go to always is eggs, spinach, and lentils for breakfast and some ground beef, beans, and broccoli for lunch and dinner.

There’s nothing wrong with that at all. You may love it, it may not bother you, and in fact it might even help you see success more quickly. Go-to meals are gone to for a reason.

But if more is what you’re after, but you’re still having trouble coming up with ideas, here are some photos of actual slow-carb meals I’ve prepared (or my wife has prepared) to give you inspiration.

Breakfast

Lunch

  1. Nearly all of them are appealing and there are several recipes I want, e.g. homemade sauerkraut, cole slaw, but the most interesting are the egg white burrito (I’m always wondering what to do with extra egg whites), and the bean crust w/ eggs and vegs.

    I have been under the impression that beans are part of every meal, but most of your meals don’t show or list beans. Can you please clarify?

    • Sure – beans don’t have to be a part of every meal. They’re there primarily as a source of slowly-digested calories. When most people jump onto slow-carb, it’s very easy to under-eat, so the beans help you get the calories your body needs while making it easier on your pancreas. If you can get sufficient calories with slow carb, which I tend to use fats like coconut oil and avocado for, you don’t need legumes.
